Based on data from the last sworn declaration (DICOSE) in July 1993, the department of Salto has 635,000 cattle and 3,114,000 sheep. Although some cattle belong to dairy breeds and are intended for such production, the majority are beef breeds (mainly Hereford) and cohabit in extensive mixed production systems with sheep.
